GAJAR KA HALWA - A DELICIOUS CARROT DESSERT

Indian desserts like gajar ka halwa, usually referred to as carrot halwa, are well-liked and decadent. Made with grated carrots, milk, sugar, and a handful of aromatic spices, this sweet delicacy is loved by people of all ages. Step-by-Step Instructions:

  • Heat a heavy-bottomed pan on medium heat and add ghee to it. Allow the ghee to melt and then add the grated carrots. Stir well to coat the carrots with ghee.
  • Cook the carrots in the ghee for about 10 minutes, stirring occasionally to prevent them from sticking to the bottom of the pan.
  • In another pan, heat the milk on medium heat until it comes to a boil. Reduce the heat to low and let the milk simmer until it thickens, stirring occasionally. This procedure could take 30 to 40 minutes.
  • Once the milk has thickened, add it to the pan with the cooked carrots. Cooking should be done well while on a medium-low heat.
  • As the mixture cooks, the carrots will start to absorb the milk. Keep stirring to avoid burning and ensure even cooking
  • After around 20 minutes, the carrots will become softer and the mixture will thicken further. At this point, add the sugar, cardamom powder, saffron strands (if using), and a pinch of salt. Mix well.
  • Continue cooking the mixture, stirring occasionally, until it reaches a thick consistency and the carrots are completely cooked. This may take approximately 30-40 minutes.
  • In a separate small pan, heat a teaspoon of ghee and roast the chopped nuts and raisins until they turn golden brown. Set them aside.
  • Once the carrots are cooked and the mixture reaches the desired consistency, turn off the heat and add the roasted nuts and raisins. Mix them into the halwa.
  • Let the Gajar ka Halwa sit for a few minutes to cool slightly before serving. The flavors intensify as it rests.

Presentation and Serving:

Garnish the Gajar ka Halwa with a sprinkle of chopped nuts on top. Serve it warm or at room temperature as a delightful dessert. You can enjoy it as is or pair it with a scoop of vanilla ice cream for a contrasting taste and texture.
