HOMEMADE PANI PURI: A BURST OF FLAVOR AT YOUR FINGERTIPS

For the Puris:
1 cup semolina (sooji)
1/4 cup all-purpose flour (maida)
1/4 teaspoon salt
Water for kneading

2 cups fresh mint leaves
1 cup fresh coriander leaves
2 green chilies
1-inch piece of ginger
1 tablespoon tamarind pulp
1 teaspoon roasted cumin powder
1 teaspoon black salt
Salt to taste
Water

For the Filling:
2 medium-sized boiled potatoes, mashed
1/2 cup boiled chickpeas
1 teaspoon chaat masala
Salt to taste
Additional Accompaniments:
Sweet tamarind chutney
Spicy green chutney
Chopped onions
Chopped coriander leaves
Sev (crispy chickpea flour noodles)
Pani puri masala (optional)
Equipment:
Mixing bowls
Rolling pin
Deep-frying pan
Blender or mixer
Strainer
Small bowls for serving

Making the Puris :
Combine the semolina, all-purpose flour, and salt in a mixing basin.
Make a solid dough by gradually adding water and kneading.  Let it rest for 15-20 minutes.
The dough should be divided into small pieces, and each piece should be rolled out with a rolling pin into a thin circle.

Use a round cookie cutter or a small bowl to cut out small circles from the rolled dough.
Over medium heat, warm the oil in a deep frying pan.
Carefully slide a few puris into the hot oil and fry until they turn golden brown and crisp.
Remove the puris from the oil and drain them on a paper towel to remove excess oil.
Repeat the process for the remaining puris. Set them aside to cool.

Preparing the Pani (Spicy Mint-Coriander Water) :
In a blender or mixer, combine the mint leaves, coriander leaves, green chilies, ginger, tamarind pulp, roasted cumin powder, black salt, and salt.
Add a little water and blend until you get a smooth paste.
Transfer the mixture to a large mixing bowl and add water to dilute it. To suit your tastes, alter the consistency.
Strain the mixture using a fine mesh strainer to remove any coarse particles.
Taste the pani and adjust the seasoning if needed by adding more salt or tamarind pulp.

Preparing the Filling :
In a mixing bowl, combine the mashed boiled potatoes, boiled chickpeas, chaat masala, and salt.
All the components should be thoroughly combined.

A tablespoon of the prepared filling should be put into the puri.

Garnish with chopped onions, coriander leaves, sev, and a sprinkle of pani puri masala (optional).
Repeat the process for the remaining puris.

Serve the pani puris immediately to enjoy the crispness of the puris and the freshness of the pani.
