Ingredients:

For the vada (potato fritter):
4 medium-sized potatoes, boiled and mashed
1 tablespoon oil
1 teaspoon mustard seeds

2-3 green chilies, finely chopped
A handful of curry leaves, chopped
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder

For the batter:
1 cup gram flour (besan)
1/4 cup rice flour
1/4 teaspoon turmeric powder
A pinch of baking soda
Salt to taste

For assembling:
Pav (soft dinner rolls)
Green chutney
Tamarind chutney
Dry garlic chutney
Butter for toasting the pav

Prepare the Vada:
Heat oil in a pan and add mustard seeds. Once they crackle, add cumin seeds, ginger-garlic paste, green chilies, and curry leaves. Sauté for a minute.
Add the mashed potatoes, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes until the spices are well incorporated.
Remove the potato mixture from heat and let it cool. Once cooled, shape the mixture into small round patties.

Prepare the Batter:
In a bowl, combine the gram flour, rice flour, turmeric powder, baking soda, and salt.
